Ingredients:

4 cups grated carrots
1 cup milk
1/4 cup ghee (clarified butter)
1/2 cup sugar substitute (stevia, erythritol, or monk fruit)
1/2 teaspoon cardamom powder
A handful of chopped nuts (almonds, cashews, and pistachios)
A pinch of saffron strands (optional)
Edible flowers for garnish (optional)

Recipe

  • Peel and grate the carrots.
  • In a pan, heat ghee and add the grated carrots. Cook on medium heat until the carrots turn soft and release their delightful aroma.
  • In a separate pot, warm the milk.
  • Add your chosen sugar substitute to the warm milk and stir until it dissolves completely.
  • Pour this sugar-free milk mixture into the pan with the carrots.
  • Allow the mixture to simmer on low heat, stirring occasionally.
  • Add cardamom powder to enhance the flavour. For an extra touch, you can include a pinch of saffron strands.
  • Continue to cook until the carrots absorb the milk and the mixture thickens. This process may take around 20-25 minutes.
  • Stir in the chopped nuts, reserving some for garnish.
  • Once the halwa reaches the desired consistency, remove it from the heat.
  • Garnish with the remaining chopped nuts and, if desired, edible flowers for a visually appealing touch.
  • Allow the sugar-free Gajar Ka Halwa to cool for a few minutes before serving.
